Melt Shop and Eleven Madison Park in Zagat 30 Under 30
Restaurant review guide Zagat recently published their annual 30 Under 30 list and two of our NoMad neighbors are featured.
The list includes Spencer Rubin, Founder and Managing Partner of Melt Shop. Rubin, who first opened Melt Shop at the age of 25, has been set on making waves in the food industry since he was a young kid. Rubin tells Zagat, “When I was about eight or nine, I decided I wanted to own a restaurant one day. I made it my goal to learn whatever I could about it.”
Since that time, Rubin has gone on to study at Cornell and intern with Danny Meyer’s Union Square Hospitality Group. Melt Shop, which serves up variations on the American classic grilled cheese, currently has four locations in Manhattan and is planning to expand further by the end of 2014.
Zagat also featured Megan Vaughan, Operations Manager at Made Nice, Daniel Humm and Will Guidara‘s hospitality group behind Eleven Madison Park and The NoMad. Vaughan, a graduate of the Culinary Institute of America, started at out as a server at Eleven Madison Park. While she was first demoted to back waiter, she turned things around, working virtually every position in the dining room before starting Eleven Madison Park’s cheese program. She now works closely with Will Guidara handling the operations of both Eleven Madison Park and The NoMad.
