After Months of Anticipation, Bourke Street Bakery is Open in NoMad

Some things are definitely worth the wait. After months of impatient expectation, the highly popular Australian chain Bourke Street Bakery officially opened its first location outside Australia on May 4—right here in NoMad.

While the opening was delayed some six months past the expected launch in fall of 2018, that didn’t stop the lines of crowds from forming outside the door all through the opening weekend of business. According to Eater, pastries were mostly sold out by mid-afternoon.

Bourke Street Bakery,  widely known for its daily offering of fresh-baked organic sourdough breads, has developed a near-cult following over its sausage rolls that are made with either lamb and harissa or pork and fennel, both in a delectable flaky crust. Aussies are also wild about its signature ginger crème brulee tart, which will no doubt become an American favorite as well. Visitors can either purchase items to go or enjoy a variety of pastries and made-to-order sandwiches and salads in Bourke’s 40-seat dining area.

What makes this particular opening so special is not just that it’s the first Bourke Street Bakery location outside of Australia; it’s also that the chain’s husband-and-wife co-founders, chef/baker Paul Allam and manager Jessica Grynberg, actually moved to NYC in 2017 to make it happen. The result: New Yorkers aren’t getting a franchise chain out of this deal; they’re experiencing the real thing.

No pre-packaged food items or formulaic recipes in the hands of some inexperienced franchisee. Instead, we have the founders themselves creating fresh breads and pastries from scratch in the New York kitchen, just as they did when they opened their first location in Sydney fifteen years ago — Paul  even mills his own flour to bake the breads. He’s even taking the opportunity to tweak the menu to include more seasonal items and NYC-centric offerings.

Bottom line: When you visit the newly opened Bourke Street Bakery on East 28th Street between Fifth and Madison Avenues, you’ll find astounding organic breads and a wide selection of pastries.   Moreover, you’ll experience the personal touch that made this bakery all the rage in the Land Down Under.
